Hospitality Evaluation

For our assignment this term we were asked to
- Research lifestyle diseases and habits
- Use the information from your research and from class lessons to create and prepare a 2 course meal suitable for a restaurant menu to cater for the disease or lifestyle choice studied.
- Justify your choices.

While completing the assignment I found that it was very informative and interesting I really enjoyed learning about many of the lifestyle diseases and allergies that you can be born with or develop through life and how much it can affect them and the restrictions they have with foods.

For my two dishes I made banana and passionfruit muffins and berry cakes which both used ingredients that were suitable for people who have a gluten free diet. I think that I went quite well in making my dishes and Raier was a good help because we used the method of one person focusing on one dish but helping each other. They both turned out really nice and tasted delicious. We did not have any difficulties in making the two dishes however; there would have been one thing I would have changed if I were to repeat this task. That being time management, I think I could have been a bit quicker with getting the muffins organised and into the oven earlier and start cleaning up earlier which would have made it run quite smoothly. I am really happy with the final result of my assignment, I think that it was really enjoyable and I can’t wait to see what next semester has to offer!

After looking through recipes and information I have decided to choose the Gluten Free diet as the recipes I am going to cook. I have found one which I want to cook and that is the banana muffins with a passionfruit glaze which uses ingredients that are supplied to people that require a gluten free diet.

A) Identify the circumstances in a person’s life which may mean that they require special diets?
SOME PEOPLE ARE BORN WITH DISEASES AND ALLERGIES THAT REQUIRE A SPECIAL DIET AND SOME PEOPLE DEVELOP THEM THROUGHOUT THEIR LIVES WHETHER THEY ARE A CHILD TO A MATURE ADULT. FOR EXAMPLE, DISEASES LIKE DIABETES TYPE ONE YOU ARE BORN WITH EITHER BEING FOUND COMMON IN THE FAMILY OR IT HAS NOT BEEN RECORDED IN YOUR FAMILY’S HISTORY. HAVING DIABETES REQUIRES A CERTAIN DIET THAT HAS TO BE KEPT IN ORDER TO CONTROL THE BODY’S BLOOD SUGAR LEVELS. DURING LIFE ALLERGIES CAN ALSO BE DEVELOPED WHICH CAN ALSO REQUIRE A SPECIAL DIET WHICH EXCLUDE FOODS THAT MAY TRIGGER AN ALLERGIC REACTION. SOME FOOD ALLERGIES ARE SHELLFISH AND FISH ALLERGIES, MILK ALLERGY, SOY ALLERGY, WHEAT ALLERGY, PEANUT AND EGG ALLERGIES JUST TO NAME A FEW. ANOTHER CIRCUMSTANCE IN SOMEONE’S LIFE THAT MAY REQUIRE A SPECIAL DIET IS RELIGIOUS BELIEFS AND PRACTISES, FOR EXAMPLE IN THE MUSLIM DIET CARNIVOROUS ANIMALS ARE NOT PERMITTED, ALL PORK AND PORK PRODUCTS ARE TOTALLY FORBIDDEN, ALCOHOL IN ANY FORM IS NOT PERMITTED AND PRODUCTS LIKE LARD, GELATINE, RENNET AND VANILLA EXTRACT SHOULD BE AVOIDED. IN THE HINDU DIET EATING BEEF IS NOT ALLOWED BECAUSE THE COW IS SACRED TO THEM.
B) Explain the difference between a special food need that an individual may be born with and a special food need that may develop as a result of illness or the environment in which a person lives.

Special food need that you can be born with:

Some special food needs like diabetes type 1 and some allergies that you can be born with are either common in the family or just develop without any traces in family history.

Special food need that you can develop:

Special food needs that you can develop are either based upon a result of an illness like diabetes type 2 or the environment that a person lives in. For example type 2 diabetes often goes hand in hand with obesity, high blood pressure and high cholesterol and these are problems that you can develop during your life.

It is clear that there is a difference between a special food need that you can be born with and one that you can develop. It is basically saying that you cannot prevent a special food need that you are born with but during life you are in control of your body meaning that diseases like type 2 diabetes you can avoid by looking after your body and keeping it healthy.

My USB is broken and it will not let me access my files on there! Therefore i have lost my assignment and will have to start again!!!
